Rhubarb Dream Bars




Rhubarb season is upon us. If you never had rhubarb or if your not a big fan. You should still try these bars. I called them Dream Bars because they are like eating a piece of heaven. So fricken good.


You also know that I hate when people have to scroll for 5 minutes just to get to the damn recipe. So here it is:


Rhubarb Dream Bars


Crust/Topping

2 1/2 Cups All Purpose Flour

1 Cup Brown Sugar, firmly packed

1 Cup chopped Pecans, toasted (don't forget the toasting part!)

1 Cup Butter, Cold


Filling:

2-8 oz. bricks of Cream Cheese

1 1/2 Cups Sugar

2 Eggs

1 tsp. Vanilla


Rhubarb Center

4 Cups Rhubarb, Chopped

1-3 oz package Strawberry Jello

1/2 Cup Sugar


Directions:

1) Preheat oven to 350°F.

2) In a mixer, add flour, brown sugar, pecans and cold butter. Mix until crumbly.

3) Put 1/2 of the crust mixture in to a parchment lined 9x13 pan. Press together.

4) Bake for 10-15 minutes or until edges are lightly golden brown.

5) While crust is baking, chop rhubarb and put into a medium sized bowl.

6) Mix rhubarb with Strawberry jello and sugar. Set aside.

7) Mix together cream cheese and sugar until light and fluffy.

8) Slowly add eggs, one at a time and mix thoroughly.

9) Add vanilla. Mix to combine.

10) Remove the baked crust from the oven. Top with cream cheese mixture. spread evenly over the crust.

11) Top cream cheese mixture with rhubarb mixture. You won't be able to spread it around so lightly spoon the mixture to cover the entire pan.

12) Top rhubarb mixture with remaining crust/topping.

13) Bake for 40-45 minutes or until top is golden brown and center is slightly jiggly.

14) Cool for at least 4 hours before cutting.
